Yesterday I went to a restauraunt and had 20oz prime rib with a side of mashed potatoes that were the best I have ever eaten, I remember them being creamy, with skin and mixed with some good herbs and spices.

I love this one..Garlic Smashed Potatoes
2 pounds unpeeled baby red potatoes, cut in half if large
6 cloves garlic, halved
2 Tbsp butter
2 Tbsp heavy cream
1/4 cup chicken stock
Salt and freshly ground black pepper to taste
1/8 cup chopped chives
2 Tbsp bacon bits
PREPARATION:
Gently boil red potatoes and garlic in salted water until tender. Drain.

sour cream and dill mashed with butter and sea salt
garlic and creamcheese mashed with pepper, butter and sea salt
(these first two add to the potatoes that you already mashed with milk or cream)
or just butter, heavy cream, salt and pepper

Add some butter, dill spice and sea salts to taste. It's easy and good.
U do not have to add tons of stuff :-)
I would recommend a basic recipe. Boil the potatoes until a fork can be easily inserted, drain. While they are still very warm, add butter( the amount depending on how much u like, u can always add later) salt, garlic( again, personal preference as to how much) and half and half. MASH it with a potato masher and voila, the mashed potatoes are perfect :-)
