I have the eggs, potatoes, mustard little mayo





Any good recipes with what I have for our cookout?Potato salad recipes with limited mayonaise but more mustard?
If you can scrape up 1/2 cup of mayo, this one may work:





Mustard and Pepper Potato Salad





6 potatoes, washed


1/2 cup mayonnaise


1 (250 g) container sour cream


1 onion, finely chopped


2 teaspoons prepared mustard (any kind)


1 teaspoon white pepper


2 teaspoons dried tarragon (optional)


2 eggs, boiled and chopped





Dice and steam or boil potatoes until just tender.


Place in a bowl.


add mayonaise and sour cream, mustard and pepper.


add onions, eggs and tarragon.

CREAMY MUSTARD POTATO SALAD





5 lb. potatoes, cooked, peel and dice fine


1 dozen boiled eggs, chopped fine


3 c. celery, chopped fine


1 lg. onion, chopped fine


3 tsp. celery seed





Mix above and add dressing.





DRESSING:





3/4 to 1 qt. salad dressing(mayo or miracle whip)


1 c. sugar


1/2 c. mustard


1/3 to 1/2 c. white vinegar
Take some sour cream and add it the mayo you have and use it.Or better yet add some pickle juice to it,shake well and mix it in the potatoes.If the mustard makes the salad too tart add a pinch of sugar and the bite will go away.

take a few eggs and make some mayo...with oil and a processor.....but if you want add more mustard and maybe some sweet relish.......or sugar to balance it out. Use a lot of black pepper with the mostly mustard style....it will be good.
