ANY potato recipe is a nice one -- I'm from Idaho!!!!!!Has anyone got any nice potato recipes?
Alright i dont use recipes and measurements when i cook but this is how I make my super delicious mashed potatoes.
I peel and cut up russet potatoes and boil them, then i drain them and add a couple splashes of milk, a couple tablespoons of butter and maybe a teaspoon or so of baking powder (makes them fluffy) then i hit them with a beater until they are mashed but still really thick and kinda clumpy, then i add a couple heaping spoonfuls of sour cream, a handfull or two of shedded cheese (marblejack or colby jack usually, but you could use cheddar or whatever you have) a dusting of garlic powder (garlic salt works too but its saltier and less garlicy lol) then i beat it some more until nice and creamy, (if its too thick add more milk and butter or sour cream)
from there i put it in an oven safe bowl or a glass loaf pan works good for about 3-4 servings and put more cheese and chopped green onion on top and either bake it at around 325 for 10 minutes or so until its all melty or if you want to you can just stick in the microwave for a bit.
hope you give it a try and like it!
Scalloped Potatoes....a favorite of mine and very esay to do.
INGREDIENTS:
4 medium size potatoes, peeled
1 cup shredded cheddar or any cheese
2 cups heavy cream
1/2 cup cilantro or parsley, chopped
1 pinch salt
DIRECTIONS:
Slice potatoes very thin lengthwise (1/16-inch to 1/8- inch thick) and place in a large bowl. Add cheese, cream, cilantro and salt, mixing to coat the potatoes.
Spray an 8-inch by 8-inch square pan with non-stick vegetable spray. Layer potatoes along with cheese and cream mixture into the pan, pressing down gently to compress the mixture. Bake uncovered for 1 hour at 375掳F until potatoes are soft when pierced with a knife and lightly golden brown on top. Cool at room temperature and cut into any desired serving shape.

I like to add some sour cream, chives and shredded cheddar to my mashed potatoes. I just mash it all together. It's so simple, but sooooo good.

Yep, try my party potatoes:
1 large box instant mash potatoes, prepared to directions
1 large carton of Dean's french onion dip
1 cup of shredded cheddar cheese.
Mix the dip with the potatoes, spread in 9 x 13 baking dish, top with cheese and bake for 30 minutes.
If you can not find Dean's french onion dip, use Philly with garlic and herbs, it works well too, but you need 2 packages of it.
