GARLIC MASHED POTATOES

Cover potatoes with water sufficient to cover in a heavy-bottomed pan. Cover and bring to a boil. Reduce heat slightly and simmer until potatoes are fork-tender.

Drain potatoes and set aside. Return empty pan to heat and add butter, leaving until butter melts. In a separate pan, bring cream or milk to boil (do not allow to curdle; remove from heat immediately when it starts to boil).

Mash the potatoes, beating in the butter and half%26amp;half, cream or milk, mashed garlic, and salt and pepper, until potatoes are smooth and fluffy.

Boil the potatoes until well cooked, but not over-cooked, or you won't be able to mash it properly. For a slightly nicer flavour, add a couple of sweet potatoes with the normal ones.

Add a good splash of milk, some butter, and pepper, then mash. Keep tasting until all the lumps are gone.

Variations:

Add some chopped spring onions.

Stir in some chopped crispy bacon.

Grate some cheddar cheese and mix into the mash for cheesy mash.

Use dried or fresh chopped herbs, for example, chives or basil.

Mix in some herby cream cheese.

Saut茅 some finely-chopped onions and garlic, then mix into the mash with plenty of pepper and herbs.
Add a splash of milk and a heaping spoonful of butter. If after you've been mixing your potatoes with an electric mixer and there isn't enough milk, add a tiny bit more at a time until the potatoes smooth out. Don't over do the milk, and make sure to add a little salt (not enough to make it WAY too salty) and a little pepper while you're mixing them.
