Simple and delicious - cut potaoes into large dice (3/4'; cubes). Toss with lots of olive oil %26amp; fresh rosemary. Put on a sheet pan, season liberally with salt %26amp; pepper, and put 'em in a 425-degree (Fahrenheit) oven for about 40 minutes, or until crispy on the bottoms and sides and fluffy inside.
It doesn't get much simpler, nor does it get much tastier. You can hit 'em with a little more fresh rosemary when they come out.Does anyone have any really good potato recipes that is easy and simple.?

twice baked potatoes...
first bake 4(pretty much as much people your serving) potatoes,
and when theyre done, cut them in half and scoop out the insides(leaving the outside skin intact) then mix the potato insides with 2cups cheese and 1 cup sour cream (eye it... this is a to-your-taste recipe) mix and add spices. then stuff the shells with the potato mix and bake until the tops are crispy.

Here is my personal favorite:
Get a nice, fist sized baking potato
Bake it until it squooshes a little when you squeeze it with the potholder. Put it on a plate and split it open. Fill with butter, sour cream and a little salt and pepper. Eat.
we throw potatoes in the microwave for about 3 mintues than cut them up and put butter and onions all together in foil and throw it on the bbq with the meat and let it cook while the meat cooks. we sometimes add greenchilies to it, that way we have everything ready at once.
Peel the potatoes, boil them. At the same time, chop up some spring onions and cabbage, boil them separately.
When they're all done, mash the potatoes, chuck in a drop of milk and a ton of butter, then chuck in the onions and cabbage and mash again.
It's an old Irish dish called Colcannon. Serve with beans and sausages.
