Is this a sort of healthy twice baked potato recipes?

INGREDIENTS





* 1/4 cup olive oil


* salt and pepper to taste


* 6 baking potatoes


* 1/2 cup shredded Cheddar cheese


* 1 egg, beaten


* 1/4 cup butter


* 1 cup sliced green onions, divided


* 1/2 cup milk


* paprika to taste





DIRECTIONS





1. Preheat oven to 400 degrees F (200 degrees C).


2. In a small bowl combine oil, salt and pepper. Rub potato skins with oil mixture.


3. Bake potatoes (do not wrap in foil) in preheated oven for 50 to 60 minutes, or until soft.


4. Remove potatoes from oven and slice skin off of the top. Scoop the flesh into a large bowl, reserving the intact skins. To the potatoes add cheese, egg, butter and half of the green onions. Mash potatoes while gradually adding milk. Spoon the mixture into the skins and top with remaining onions and paprika.


5. Bake for an additional 15 minutes, or until golden brown.Is this a sort of healthy twice baked potato recipes?
Im not sure, The baking potatos and cheese and butter sounds like alot of fat. Try using sweet potatos (less carbs and fat) A cheese that is less rich maybe even on made with skim milk. And there is no need for butter and olive oil. Think about it. It would taste the same but be better for u.

It depends on what you mean by healthy.





The olive oil is a good source of healthy fat. Some subsitutuions you could make is use egg whites instead of the whole egg. Also, for the chedder cheese, use a lower-fat percentage like 1% or 2% or even fat-free. For the milk, use skim or a lower-fat percentage.

Sounds great, but if you're concerned with fat content, I'd use low-fat or no-fat Cheese, Butter, and Milk. It's not so much the fat that will get ya, it's the Cholesterol.
While it sounds really good, it's not exactly health food. But unless you're on a restricted diet it's fine to eat this way sometimes.





If you want it healthier, use lowfat cheese, eggbeaters instead of the egg, and skim milk. That will lighten it up a lot without changing the flavor too much. Don't substitute the butter for margarine, which I feel is less healthy with all the transfats.
