Dressing for Potato Salad
INGREDIENTS:
1/2 cup mayonnaise
1/2 cup sour cream
2 teaspoons prepared mustard
1 tablespoon ketchup
1 1/2 teaspoons Worcestershire sauce
1/2 cup diced onion (optional)
salt and pepper to taste
DIRECTIONS:
Mix together the mayonnaise, sour cream, mustard, ketchup, Worcestershire sauce, onion and salt and pepper. Refrigerate until ready to toss with potatoes.

Potato sausage casserole
Preheat oven to 350
4 potatos peeled and thinly sliced
1 can cream of mushroom soup
1 can milk
1/4 cup sour cream
8 slices American or chedder cheese
1 package Jimmy Dean ground sausage-fried crumbled and drained.
Combine - Soup, milk, sour cream and meat in a bowl.
Spray baking dish with Pam
Layer potatos, meat, cheese and repeat
Cover with foil and bake @ 350 for 1 hr
Hamburger and potatos
1 lb ground beef, cooked, crumbled and drained
3 potatos peeled and diced
1/2 sweet onion Walla Walla or Vidallia finely chopped
3 Cups water
2 TBSP flour
Garlic, Cumin, salt and pepper to taste.
Cook onion and hamburger together, drain and rinse, return to skillet add potatos, spices, mix milk and flour together in seperate cointer, whisking well (basically your making a thickening agent) bring to a boil, reduce heat to a simmer and cover cook until the potatos are fork tender.
You might have to mess with this a little bit to get the water, flour mixture right. I am horrible and don't use recipies so everything is in my head, I never measure. :(
Fried Potatos
Thinly sliced spuds (scubbed)
Oil enough to cover the bottom of the skillet
salt, pepper, garlic and Tony's
Fry on medium high heat turning often.
Season
Serve Hot.

twice baked potatoes.bake potatoes in microwave,scoop out insides,mash with butter,seasonings,cheese,bacon bits,whatever you want really,put back in shells,heat back up..yum.serve with sour cream/ranch.

for mashed potatoes i sometimes use 2 white and 1 sweet potatoe.
once in awhile for mashed potatoes i'll scoop in a little white horseradish into the white potatoes.
Roasted Cajun Potatoes
2.5 pounds potatoes
1/4 cup vegetable/olive oil
2 shallots finely chopped
1 clove garlic, minced
1 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon finely ground black pepper
2 tablespoons chopped fresh parsley
Preheat oven to 450F. Peel the potatoes, then rinse under cold running water and pat dry with a kitchen towel. Cut each potato lengthwise into 8 wedges. In a roasting pan stir together the oil, shallots, garlic, salt, paprika, cayenne pepper and black pepper. Add the potatoes and, using a large spoon or by shaking the pan from side to side, coat them evenly with the oil mixture. Roast the potatoes, turning them every 15 minutes, until tender and golden brown, about 45 minutes. Taste and adjust the seasoning. Transfer to a serving dish, garnish with the parsley if desired and serve immediately. Serves 4 to 6.
Potato Casserole with Sour Cream
6 potatoes, cooked and grated or riced
1 1/2 teaspoons salt
1 cup sour cream
1 bunch green onions (6 to 8), chopped
1 cup shredded Cheddar cheese
1/4 cup melted butter
Directions for potato casserole
Lightly butter a 2-quart casserole. In a large bowl, combine potatoes, salt, sour ream, green onions, and Cheddar cheese; spoon into casserole. Pour butter over top of potatoes; bake at 425掳 for 25 minutes, or until potato casserole is nicely browned. Potato casserole serves 6 to 8.
Potatoe bake :)
4 peeled and thinly sliced potatoes
2 diced pieces of bacon
1 diced onion
300 ml cream
1 cup (or so) of cheese
place a layer of potatoes in baking dish and top with bacon, onion and cheese and keep layering till u run out of potatoes then pour over cream and top with some more cheese and bake at 200 degrees for 40 min till potatoes are cooked
