I seen one on here that had a potato but they added like butter, some spices, and wrapped it in aluminum foil and cooked it for a little while. I used to do one in foil packets. Cut large pieces of foil. Spray with cooking spray (like PAM). Slice potatoes into thin slices, sprinkle with salt and pepper, toss well, top, with onions sliced thin (opt.) bring sides of foil up to form a packet and put on grill where heat is not as hot.....along sides perhaps. Be careful when you open these as they will be full of steam.

I have a great simple recipe for potatoes. Slice up potatoes fairly thin and put about a cup in a square of foil. Add salt, pepper, and diced onions along with dots of butter. Fold up edges of the foil like boats so they are sealed. You can make as many as you want, with each one holding about a cup of potatoes. Either put them on the outdoor grill or in the oven and in a little while you will have delicious tasty potatoes to serve with any entree!
You can do this on a BBQ or fire and in an oven too. Slice your potatoes a good 1/4 inch thick but not quite all thru. In between each slice put a slice of tomato. Start wrapping the tinfoil to make a sort of cup and sprinkle with green onion, italian seasoning, salt and pepper. Put a few globs of marg or butter on it. Wrap the whole thing tightly. Then cook and enjoy - it is a nice change from just straight potatoes.
Not made on a grill but I make this for every BBQ I go to - and always have requests for the recipe . . . actually, I always cheat and sprinkle the top with shredded cheeese and bacon . . .
BAKED POTATO CASSEROLE
32 ounces hash browns 鈥?thawed
2 cups sour cream
陆 cup butter 鈥?melted
1 can cream of celery soup
陆 cup onion 鈥?finely chopped
2 cups grated cheddar cheese
1 teaspoon salt \
1 teaspoon pepper
Preheat oven to 350 degrees. Mix all ingredients and spoon into in a 9x13 pan. Bake for about one hour or until light brown crust forms on top.
you slit the potato lengthwise, but not all the way through. add 1 tbsp butter, salt, pepper and steak seasoning. (you could do lime and chili powder instead of steak seasoning or you could do butter an Parmesan cheese). wrap tightly in foil and either grill until done or boil.
