Polish Potato Pancake Recipes?

My neighbor used to make potato pancakes. I remember an iron skillet and some kind of shortening (crisco?). Any recpes out there? ThanksPolish Potato Pancake Recipes?
Shred the potatoes on a grater add onion to taste mix one egg and some sifted flour to bind. You can use shortening or butter or even veg oil. Key is to get cast iron skillet very hot. Mold potato into pancakes and fry. Keep warm in oven

I remember my polish grandmother making potato pancakes with leftover mashed potatoes, with one or two whole eggs added to help keep the eggs together when they were fried.

2 cups grated potatoes


2 eggs, well beaten


1 T flour


1/2 t salt


Pinch of pepper





Grate large potatoes and drain off excess juice. Measure the pulp


and add remaining ingredients. Beat well. Heat 4 tablespoons


shortening in a skillet. Drop in batter by tablespoonful, spread


thinly and fry to a deep brown on each side. Vegetable, meat, or


chicken fat will give much crisper pancakes than butter. A


teaspoonful of grated onion adds flavor.
2 cups mashed potatoes


1 egg, beaten


1 teaspoon salt


2 tablespoons green onion


1/4 cup shredded Cheddar cheese


1 tablespoon butter





In a medium bowl, mix together potatoes, beaten egg, salt, and cheese. Melt butter on a large griddle at medium heat. Drop potato mixture onto griddle 1/4 cup at a time. Flatten with a spatula to 1/2 inch thick. Fry approximately 5 minutes on each side, until golden brown. Serve hot.
That recipe answer looks good. If you want something faster and easier, go to the ethnic food section of any supermarket and you will find at least one mix for potato pancakes. Personally, I'd go with the recipe!
