1 cup onion, diced
1/4 lb. (1 stick) butter, thinly sliced
1 (8 oz.) container sour cream or plain yogurt (optional)
1 (8 oz.) pkg. Kraft sharp cheese
1 can Cream of Chicken soup
1 (2 lb.) bag frozen hash brown potatoes, thawed
1/2 to 1 cup potato chips or corn flakes
Stir together well the diced onion, sour cream or yogurt, grated cheese, thinly sliced butter, and Cream of Chicken soup. Add the hash browns and mix well.
Spread this mixture evenly in a casserole dish and top with crushed chips or corn flakes.
Bake at 350掳F 1 to 1 1/2 hours.

Baked Mashed Potato Casserole
Serves 4鈥?
4 medium russet or red potatoes, cut into quarters
2 tbsp. butter
2 tbsp. extra-virgin olive oil, divided
2 to 4 tbsp. milk
1 small onion, finely chopped
1 large stalk celery, finely chopped
1/2 cup red pepper, finely chopped
Sea salt to taste
White pepper to taste
2 tbsp. freshly grated Romano Cheese (optional)
Paprika to garnish
Cook the potatoes in boiling salted water until tender, about 15 minutes.
Preheat oven to 450掳F.
Heat 1 tablespoon of olive oil over medium heat in a skillet. Saut茅 the onions, celery and red pepper for 7 minutes, or until tender, stirring often. Set aside.
When the potatoes are done, drain them well and return to the cooking pot. Add the butter and the milk. Mash together well. Add the saut茅ed vegetables. Season the mixture to taste with sea salt and white pepper.
Spread the remaining tablespoon of olive oil in an 8x8 or 9x9 casserole dish. Spoon mashed potatoes into the dish and sprinkle with grated Romano cheese and paprika. Bake for 20 minutes or until golden brown.

Cajun Potato Fries
2 Idaho potatoes, large
2 sweet potatoes, large
2 Tablespoon paprika
1 1/2 teaspoon black pepper
1 1/2 teaspoon white pepper
1 1/2 teaspoon onion powder
1 1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1 1/2 teaspoon salt
1 1/2 teaspoon thyme
1 1/2 teaspoon oregano
1/2 cup vegetable oil
Preheat oven to 400 degrees
Mix all spices together. Peel the potatoes.
Cut the potatoes in half, then cut on the diagonal into equal size pieces. Place the potatoes in a large bowl with the vegetable oil and toss to evenly coat.
Sprinkle with the Cajun spices and toss to evenly coat.
Place the potatoes on a cookie sheet and bake in 400-degree oven until tender-approximately 40 minutes depending on the size of the potato pieces.

GERMAN FRIED POTATO PANCAKES
5 lbs. potatoes
2 lg. sweet onions
2 lg. eggs
1/2 c. self-rising flour
Salt %26amp; pepper to taste
Grate potatoes and onions together. Pour off excess juice, mix in eggs then add enough flour to thicken. Salt and pepper to taste. In large iron skillet, heat cooking oil; drop mixture into hot oil (about 2 inches pancakes). Brown to crisp on both sides. Serve hot.
You will need a slow cooker for this recipe.
Hash Brown Potato Casserole
Makes 8-10 servings
26-oz. package frozen shredded hash browns
3 tablespoons oil
2 cups chopped ham, optional
2 10 3/4 ounce cans cream of potato soup
1/2 cup grated Parmesan cheese
16 ounce container sour cream
8 ounces shredded cheddar cheese
1. Brown hash browns in oil skillet. Transfer to slow cooker.
2. Add remaining ingredients and stir well.
3. Cover. Cook on low 3 hours.
Slice potatoes
dice onions
cream
cheese.
Layer these up, many times, and cook in oven till tender
