Twiced Backed Potato





Cut a backed potato almost in half and scoop out most of the insides. Mash these and mix them with grated cheese (or soy cheese) put back into the potato; top this with diced veggies like broccoli and heat through again.





You can add Boca Crumbles, or tofu to this also.
something I ate in Morocco, mouth-watering and I've made it twice already since I returned home. Peel and chunk up a few potatoes, boil them and when they are slightly undercooked, drain. Put some olive oil in the pan, cook some cumin seed and a clove of chopped fresh garlic a couple minutes until the garlic is golden, add the potatoes, a handful of chopped cilantro, salt and pepper and stir it up and cook about 3 minutes longer until potatoes are done , this is so good, can hardly wait to get it out of the pan and onto my plate.
