Actually, potatoes don't freeze well. But if you are intent on going ahead with it or just want to experiment with such a dish, then go here to read what other cooks have learned....

Any recipe like a casserole with potatoes will freeze well, but the potatoes will quicly breakdown which helps thicken the casserole.
Mashed potatoes will break down so it is best to have some of those bulk bags of instant potatatoes at hand to help thicken up again.
